I visited a cheese Wisconsin cheese factory one day . Witnessed 12 – 24 month old brines waiting in open exposed vats to receive the next load of cheese! ( wasn’t an organic factory, but nonetheless, it was disheartening to see the cloudy brine and be told how they insure that the bacteria, mold, and pathogen growth remains at a safe level – you can guess what they put into it).
